It’s actually possible to crave cauliflower? I know, I thought it impossible prior to cooking up this Curried Cauliflower dish.
*~1/2 cup veggie or chicken broth
*1/2 head of cauliflower, cut into large florets
*2 teaspoons black mustard seeds
*1 to 2 teaspoons turmeric
*3 teaspoons ground cumin
*4 tablespoons olive oil
*3 garlic cloves, chopped
*~1 tablespoon fresh ginger, finely chopped
*1/2 Serrano chili, sliced
*1 red bell pepper, sliced
*1 large red onion, sliced
*3 tomatoes, chopped
Toss the cauliflower florets with the cumin and turmeric. After heating olive oil on medium heat, add salt, mustard seeds and cauliflower and cook for about 6 to 7 minutes. I add a few tablespoons of broth or white wine after about five minutes, as this mixture starts to get dry. Then, add the onion and bell pepper and cook for a few minutes. Lastly, add the garlic, chili, ginger, and tomatoes and cook for a couple minutes. Now add the broth and simmer for about 10 to 15 minutes.
Optional: sprinkle a little bit of chopped parsley or cilantra & a squeeze of lime when serving
