Marinated Mushrooms

*1/2 cup vinegar + 1/2 cup water

* ~ 1 pound mushrooms (stems removed, cut in half if large)

*1/4 cup olive oil

*1 tsp dried thyme

*1 tsp salt

*1/2 tsp black pepper

*2 tsp dried oregano

*~ 3 Tbsp fresh lemon juice

*~4 tsp minced garlic

*~ 2 Tbsp fresh parsley, chopped

*1 tsp red chili pepper flakes if you desire some extra spice

Bring water and vinegar to a boil in a medium-sized pot.  Add mushrooms and simmer for about 5 to 10 minutes.  Mushrooms need to soften, but you don’t want them to overcook.  Remove from heat and drain.  Lightly pat dry with a paper towel.

Whisk together all other ingredients.  Add mushrooms to marinade and chill in refrigerator for two hours.  Serve chilled or warm.
