Salmon Burgers


~ 1 pound salmon filets (this came out to three filets for me)

1/8 cup chopped dill + 1/8 cup chopped parsley

2 Tbsp minced onion

1 Tbsp fresh lemon juice

~ 2 dashes red pepper flakes

1 egg

2 Tbsp bread crumbs (I use Ian’s Whole Wheat Panko Crumbs – he also has a gluten-free line)

~ 3 ounces grated, mild-flavored cheese (mozzarella, jack, white cheddar)

1 Tbsp Dijon Mustard

1/2 tsp salt + 1/4 tsp pepper

Step 1: slice skin off salmon filets

Step 2: put filets in food processor

Step 3: pulse about three times or until chopped into large pieces (one-second pulses)

Step 4: add rest of the ingredients into food processor and pulse about 4 to 5 times (one-second pulses)

Step 5: form the mixture into 4 patties and chill in refrigerator for 20 minutes

Step 6: mix 1/2 cup breadcrumbs + 1/4 tsp salt + 1/4 tsp pepper onto plate

Step 7: place both sides of each salmon patty into breadcrumb mixture and shake off excess

Step 8: add 2 Tbsp olive oil to non-stick skillet and turn to medium-heat

Step 9: when oil just starts to smoke, place 2 patties on skillet and cook each side for 2-2.5 minutes (repeat for the other patties)

Step 10: add condiments of your choice and eat your heart out!
