Baba Ghanoush

Baba Ghanoush is the low-glycemic cousin of hummus.  It’s just as creamy and, much like hummus, works well as a spread on sandwiches and wraps.  Out of a 100-point scale, this baked veggie ranks in the very low glycemic index range at a mere 15.

Baba Ghanoush

ingredients

*1 eggplant

*2 cloves garlic

*1 Tbsp olive oil

*1 Tbsp tahini (sesame paste)

*2 Tbsp fresh lemon juice

*1/2 tsp salt (or more to taste)

*1/8 tsp black pepper

*1/2 tsp cumin

*1/4 tsp paprika

*preheat oven to 350 degrees fahrenheit

*halve eggplant vertically, place on parchment- or tinfoil-lined baking sheet, prick a few times with fork, brush with olive oil, and sprinkle with s&p

*place 2 garlic cloves alongside eggplant and bake 15 minutes; remove garlic cloves and bake eggplant another 10 to 15 minutes (until brown on top and soft)

*allow eggplants to cool about 15 to 20 minutes.

*once eggplant has cooled, scoop out flesh into food processor, discard skin

*take peel off roasted garlic cloves and add to food processor along with the rest of the ingredients

*blend for about 2 minutes, scrape sides and taste to see if you want to modify, blend another 2 to 3 minutes or until you’re satisfied with texture

*optional: add two dashes of liquid smoke
