My husband and I road-tripped to Cologne, Germany this past weekend and, although it’s only a few hours drive from our village, we knew we’d be driving through lunch. In an effort to avoid fast food options off the autobahn, we armed ourselves with salmon wraps, fruits/veggies and some chocolate. The funny thing about the concept of “fast food” is that often it actually consumes more of our time than simply making something at home. I didn’t have to wait in a line nor drive off the freeway, just defrosted some salmon the night before, dressed it with salt, pepper and olive oil the morning of, and popped it in the oven to broil for 8 minutes. We chose to add greens, avocado, dijon mustard and tomatoes to this particular lunch-on-the-go-wrap.
