This tasty and healthy snack is in honor of my paternal grandmother who was an incredible woman. When my grandfather was in his mid-60’s, he suffered from two heart attacks within one year. With a background in dietetics, my grandmother immediately sprung into action and overhauled their diet and lifestyle. As a result, my grandfather is thriving at 92 years old. As I’ve embarked on a journey towards better health, I have often thought of Gran. Her contentment in life coupled with passion for committing to a healthy and active way of life serve as inspiration for me nearly every day.
Gran’s Tamari Almonds
1 cup almonds
1/8 cup Reduced Sodium Tamari Sauce
*note: I use Tamari over soy sauce because it’s gluten-free, but you can use soy sauce just as easily.
*Pour Tamari sauce into bag with almonds, shake well, and let marinate for at least one hour.
*Preheat oven to 350 degrees Fahrenheit.
*Line baking sheet with parchment paper.
*Drain liquid from bag, then scatter almonds onto baking sheet.
*Bake for 15 minutes, then stir almonds around so that they don’t stick to parchment paper. Place back into oven for 8 more minutes of baking (total baking 23 to 25 minutes).
*Remove and let cool before storing in jar.
